All slaughters are done without electro stunning, without electroshock, and without knockout, manually, 1 by 1, and as much as possible, with the animal’s head right side up.

The “Appellation d’Origine Protégée”, AOP (or Protected Designation of Origin, PDO) designates a produce taking its origins from a determined region or place, whose characteristics are essentially due to this geographic situation. It guarantees great quality products. Among our AOP certified meats, you will find the Bresse chicken and the Mont- Saint-Michel salt-marsh veal.
We bring to you free-range Label Rouge chicken, a chicken of great quality. Our farmers must respect a statement of work which precisely defines the product’s characteristics, the production’s requirements all along its fabrication and the certification criteria.
The Galicia Beef we offer has the IGP certification (Protected Geographic Indication). This certification attributed to specific products bearing a geographic name and linked with their geographic origin, guarantees quality products.
We propose to you awarded calves, meaning regional calves that have won competitions (award plates available at the shop). Our calves are awarded for their genetics, their physical structure and their beauty.
We save it for the Limousine-raced calf (Limousin département), grown on straw, with its mother, and milk-fed. Its meat is of excellent quality.
